Kinnathappam is a favorite snack of Kerala,made of rice flour. Normal method of making it take hours and so this instant method of making tasty kinnathappam will be useful for many. The tasty kinnathappam are prepared with slight variations in different parts of Kerala, mainly on the ingredients used and method of cooking. Try this tasty instant kinnathappam recipe and make it as part of festivals like Onam, Vishu, Ramdan, Iftar etc.

Ingredients for instant kinnathappam

  • Rice powder (idiyappam/pathiri podi) – 1 cup
  • Coconut – 1 1/2 cup (scraped)
  • Sugar – 1/2 to 3/4 cup (jaggery powder / jaggery syrup)
  • Cardamom – 4 nos
  • Water – 2 1/2 cup
  • Ghee – 1 to 2 tbsp
  • Egg – 1 no (optional)
  • Cashew nuts, Raisin – handful

Preparation of instant kinnathappam

Grind rice powder, sugar, cardamom and coconut into a fine batter by adding 2 cups of water gradually. If you are using jaggery syrup, melt jaggery in 1 cup of water. So, while grinding adjust the water accordingly. After grinding, sieve the batter. Grind the remaining pulp again by adding ½ cup of water. Sieve and add this to the prepared batter. Egg is also added while preparing Kinnathappam in some parts of Kerala. So, add 1 egg if needed while grinding. Sieve the batter two more times. The more the batter is sieved, the softer the Kinnathappam will become.

Heat a pan. Add ghee and the prepared batter to a pan. Cook the batter over very low flame. Stir continuously to avoid lumps. Turn off the flame while it starts to thicken. Stir for some more time. Then add cashew nuts, raisins etc. We can add some cooked chana dal also

Prepare a steamer. Grease a plate with ghee to make the Kinnathappam. Keep the plate in the steamer. Pour the batter into the plate. Cover and cook till it is done well. It will take about 5 to 10 minutes to cook completely. Demould and cut, only after cooling down. Then cut into required shape and serve.

Soft and tasty instant Kinnathappam is ready!!!
