Kaju Katli (kaju barfi) sweets made of cashew nut
Ingredients
- Cashew nut – 1 cup ( grind to find powder)
- Water – 4 tbsp
- Sugar -1/2 cup
- Ghee (clarified butter) – 1 tbsp
- Plastic sheet/butter paper
- Silver foil(food grade)- 2 sheets
Preparation
Into a heated pan add water and sugar. Mix well. Bring it to boil over low flame. Stir continuously and make it to 3 string consistency. Then add the ground cashew nuts. Cook it over low flame. Mix and stir well to avoid lumps. Cook it to a thick rolling mixture (stir continuously). Transfer and spread the mixture immediately to a greased tray for cooling. Add little ghee and knead the mix to soft dough when it is still warm. Prepare a greased plastic sheet or butter paper. Place the dough in between the paper and roll the dough evenly to about 5 mm thickness. After rolling remove plastic sheet from the top. Paste the silver foil on it. Cut it into required shapes after cooling down.
