Mango Pachadi

Ingredients

Step 1

  • Coconut – ½ cup(fresh, grated)
  • Shallots – 2 to 3 nos
  • Cumin seeds – ¼ tsp
  • Water – ½ cup
  • Turmeric powder – ½ tsp

Preparation

Grind all of the above to a fine paste.

Ingredients

Step 2

  • Mango (ripe) – 2 nos (finely chopped, do not discard the seeds)
  • Sugar – 2 tbsp(adjust as per your taste)
  • Salt – ½ tsp
  • Water – ½ cup
  • Curry leaves – few

Preparation

Cover and cook all the above ingredients till no water is left and the mango pieces are soft and mushy. Add the ground paste from step 1 and mix well. DO NOT BOIL IT AFTER THIS STEP. Leave it for cooling down

Step 3

Ingredients

  • Coconut oil – 1 tbsp
  • Mustard seeds – 1 tsp
  • Dried red chilli – 4 to 5 nos
  • Curry leaves – few
  • Fenugreek powder – 1 pinch
  • Red chilli powder – 1 pinch
  • Yogurt – 1 to 2 cups

Preparation

In a heated pan, add oil. Once the oil is hot, add mustard seeds and wait till popping. Then add dried red chilli, shallots, curry leaves and saute for a while. Turn off the flame and add fenugreek and red chilli powders. Add this mix to the prepared pachadi in step 2. Beat the yogurt and mix it also to the pachadi.

Mix well and pachadi is ready to serve.
