Pazham pori or fried ripe plantain is one of the favorite village snacks of the God’s Own Country – Kerala, a southern state in India. Plantain, being a tropical fruit, is part of the major cultivation in the region. To know more, Pazham is the malayalam word for “banana or plantain”, while pori means means “Fry”. So Pazham pori, as obvious from the name, is fried plantain with a special mix of batter. This snack is a must for all Keralites during a mid-morning tea or the evening tea. Moreover, the snack,Pazham pori is normally fried in coconut oil, which add an aroma to it, which is irresistible. It is an easy to prepare to dish and will get your surprise guests wondering how you could be so fast in preparations.

Step 1 Batter for Pazham Pori

Ingredients

  • Rice flour – 1/2 cup (fine powder like appam / pathiri powder)
  • Rice flour – ¼ cup (coarse powder like puttu powder)
  • All-purpose flour (maida) – 1/3 cup
  • Sugar – 1/4 cup
  • Turmeric powder – 1 pinch (for colour)
  • Water – as needed to make thick batter
  • Salt – ½ tsp
  • Baking soda – 1 pinch (optional)

Preparation

First of all, mix all the above ingredients into a smooth, thick batter. Then beat them well for few minutes to make the batter smooth and fluffy. After that, leave the batter for 30 minutes and add more water if required to adjust the consistency of the batter.

Step 2 Frying the Pazham Pori

Ingredients

  • Plantain (ripe) – 4 to 5 nos (thin long slices)
  • Oil – enough for deep frying

Preparation

For preparing the pazham pori, in a heated pan, add enough oil for deep frying and bring it to boil. Then dip the plantain slices in the prepared batter (step 1) and then fry it. Moreover, medium flame is used for frying. Then flip them for cooking evenly. Finally, fry them till you get golden colour and they turn crispy. So, serve hot with a steaming cup of tea and enjoy this South Indian Snack.
