How to Brine meat ?


How to Brine – for Indian cooking


  • Chicken – 1 whole
  • Water – luke warm (enough to cover a chicken)
  • Salt – 3 tbsp
  • Bay leaves – 2 to 3 nos
  • Cinnamon stick – i no(1″)
  • Green chillies – 2
  • Black pepper corns – 1 tsp
  • Cloves  – 1/2 tsp

Take cleaned and washed whole chicken

Leave the skin on as per your recipe

Make slits as shown in the video.

Take lukewarm water (made by cooling boiled water).

Add salt ,bay leaves, cinnamon stick, cloves,black pepper corns and green chillies.

Mix until salt is dissolved

Make sure that there is enough water to keep the chicken submerged.

Add the chicken and refrigerate.

Whole chicken will take 4 to 8 hours or overnight.

Before cooking rinse off the brine and pat dry.

We can brine fish and other meats also by the same method.

Meat 1 inch thick will take 45 minutes to 4 hours.

Fish will be no more than 1.5 hours

Avoid aluminium cookware.
