Mutton Curry Kerala Style (Nadan mutton Curry)

KERALA RESTAURANT MUTTON CURRY ( Nadan Mutton Curry)

 

This is a very special restaurant styled Mutton Curry recipe. Restaurants in Kollam-Kerala, like Ezhuthani or Fayalwan are famous for their tasty Mutton curry, which is served along with Kerala Porotta, Pappad and Onion salad. Kollam Ezhuthani is also famous for its Vettu Cake or Fried cake, which are made in 1000s per day, to be sold out in hours.

 

Step 1

Ingredients

  • Mutton – 1kg
  • Coconut oil – 4 tbsp
  • Ginger (crushed) – 2 tsp
  • Garlic (crushed) – 1 tsp
  • Shallots (crushed) – 250 g
  • Salt – as needed
  • Curry leaves – few
  • Green Chilli -3 to 5 nos
  • Turmeric powder – ¼ tsp
  • Coriander powder – 2 tsp
  • Black pepper powder – ½ tbsp
  • Garam masala powder – ½ tbsp
  • Water – 1 ½ to 2 liter

Add coconut oil to a heavy bottom vessel. Sauté after adding garlic and ginger. Then add the crushed shallots and pinch of salt. Add few curry leaves and green chilli. Saute till onion turns translucent. Add turmeric powder, coriander powder and saute for 30 seconds or till fragrant.

Add the mutton which is cut into small pieces and salt as needed. Add black pepper powder and garam masala powder to it. Add water to it. Cover and cook well till mutton is done well. Make sure cooking is done over low flame. If you want to cook it faster, you can use pressure cooker. But in that case, add only 1 cup of water and cook till 3 whistles over very low flame.

 

Step 2

Ingredients

  • Coconut oil – ½ cup
  • Garlic (crushed) – 1 tsp
  • Curry leaves – few
  • Kashmiri red chilli – 3 tbsp
  • Mint leaves – 3 springs

 

Add coconut oil into a pan. When the oil is hot, add garlic and few curry leaves. Saute till garlic turns light golden. Add the Kashmiri chilli and mix well. Turn off the flame. Otherwise the chilli will get burnt. Saute for few seconds.

Add this chilli powder mix to the cooked mutton. Mix well and cook over low flame so that everything is combined well. Add some mint leaves and mix well. Continue cooking for another 5mins over low flame. Add more water if needed at this stage. Finally add little coconut oil before turning off the flame.

Mutton Curry is Ready!!!
