Rose wine cake ( Christmas cake – rose wine flavoured)
Soak dry fruits for one week to 1 month in rose wine like berries, raisins, cashew nuts etc.
Drain the soaked dry fruits and mix it with one table spoon of all purpose flour.
this is to prevent the fruits from sinking while baking
- Cinnamon – 1 inch
- Cardamom – 2 nos
- Cloves – 2 nos
- Mace – 1 no
- Sugar – one tablespoon
Fine grind the above ingredients and keep aside.
- Egg – 4 Nos (separate white and yellow)
- Sugar- 1 cup(finally powdered)
- Butter (unsalted) – 1 cup (200 grams)
- Vanilla essence -1 teaspoon
- All purpose flour (maida) – 2 cups
- Salt – one pinch
- Baking soda – 1/2 teaspoon
- Baking powder – teaspoon
- Caramelized sugar syrup – 1/2 cup (made from half cup sugar)
Beat the egg whites till stiff peaks form. Try to keep the mixer in the centre of the bowl, else you will break the bubbles.
In another bowl, beat the egg yolks for about 30 seconds till creamy. Add the powdered sugar in parts and beat till creamy. Add butter and continue beating till smooth and creamy. Add vanilla essence and mix. Into the bowl, sieve and add the mix of all purpose flour, ground spice mix, baking soda, baking powder and one pinch of salt.
Beat the mix and add the drained vine – 2 tbsp. Continue beating and later add caramelized sugar syrup.
If you feel the mix is thick add, you can some more Wine. Beat the mix till creamy and then add the prepared dry fruits. Mix well and then add the beaten egg white and fold gently. Do not use mixer.
Fold till no white traces are seen.
Grease a baking Pan with butter and coat with a thin layer of all purpose flour. ( Here a 9.5 ” x 9.5 ” x 3 ” tin is used for baking ). Tap the extra flour from the tray.
Transfer the cake mix spread evenly and tap the tray for couple of times – so that the mix will settle evenly.
Preheat for 15 mnts and bake at 350 Degree Fahrenheit (176 Deg Cel) for 40 to 45 minutes.
Check after 30 minutes by inserting a toothpick. If it should come out clean, then the cake is baked correctly.
Remove the cake from the pan after it cools down.
Brush the cake few times with rose wine intermittently for at least a day for better taste.
