Ada Biriyani and Noodles

Ada (Kerala flat rice noodles) is normally used for making kheer or payasam. This is a very special recipe of 2 dishes which can be made using ada. A biriyani type dish and Hakka noodles model. These dishes can be taken as snacks.

Preparation of Ada


  • Rice Ada – 4 packets of 200g
  • Salt – as needed
  • Oil/ghee – 1 tsp

Take enough water in a vessel, add some salt and oil. Let the water boil before adding the ada. 4 packets of ada is used here as we are preparing two dishes. Add the ada to the boiling water, cook till the ada is stiff and soft. Immediately drain and wash under running water couple of times. Keep it in water to avoid sticking.

Preparation of Ada Biriyani


  • Oil – 2 tbsp
  • Onion – 2 nos (long slices)
  • Ginger garlic paste – ½ tbsp
  • Salt – as needed
  • Red chilli powder – ¼ tbsp
  • Black pepper powder – ½ tbsp
  • Garam masala – ½ tbsp
  • Turmeric powder – ¼ tsp
  • Green chilli – 3 to 5 nos
  • Tomato – 2 nos
  • Mint leaves – few
  • Chicken – ¼ kg
  • Coriander leaves – few
  • Ghee – ½ tbsp

Add oil, onion, ginger garlic paste and salt to a frying pan. Saute till light golden in colour. Add black pepper powder, red chilli powder, garam masala and turmeric powder. Saute for a while. Add gree chilli, tomatoes and mint leaves. Saute till tomatoes turn mushy. Now add the chicken to this masala mix and add salt as per taste. Add a few coriander leaves for flavour. Cover and cook till the chicken is done well. Add water only if needed to cook the chicken.

Add the cooked ada (quantity as needed for biriyani). Add some coriander leaves and ghee. Cashew, raisin etc, can be added as optional. Mix well. Cover and cook for a while.

Ada chicken biriyani is ready!!!

Preparation of Hakka Noodles with Ada


  • Cooking oil – 2 tbsp
  • Ginger – 1 tsp
  • Garlic – 1 tsp
  • Green chilli – 1 no
  • Vegetable mix – ½ to 1 cup
  • Salt – as needed
  • Sugar – ½ tsp
  • Soya sauce – 1 tbsp
  • Oyster sauce – ½ tbsp (optional)
  • Hot sauce – 1 tbsp
  • Tomato sauce – 1 tbsp
  • Vinegar – ½ tbsp

Add oil to a frying pan. when the oil gets hot, add ginger and garlic. Saute for 30 seconds. Add green chilli and vegetable mix of capsicum, onion cabbage etc. Cooking is done over high flame. Add sugar and mix well. Add soya sauce, oyster sauce, hoot sauce and tomato sauce. Mix well.

Add the cooked ada and mix well. Add little tomato sauce and vinegar.

Ada Hakka Noodles is ready!!!
