Healthy Vegetable Pulao

Amarnath Pulao (Cheera)

Green leafy vegetables are essential for our health and must be included in our daily diet. Today we will be making a healthy and easy dish with spinach. This is a healthy and easy dish with spinach which can be cooked effortlessly for tiffins and other short meals.

Ingredients

  • Ghee/oil – 2 tbsp
  • Bay leaf – 1 no
  • Cloves – 4 nos
  • Cardamom – 4 nos
  • Cinnamon stick – 1 inch
  • Star anise – 1 no
  • Onion – 1 no (sliced)
  • Green chilli – 2 nos (as per taste)
  • Ginger – garlic paste – 1 tsp
  • Turmeric powder – ¼ tsp
  • Black pepper powder – ½ tbsp
  • Garam masala powder – ½ tbsp
  • Red spinach – 1 bunch (finely chopped)
  • Salt – as needed
  • Basmati rice -1 cup (soaked for 10 minutes)
  • Mint leaves – few (optional)
  • Lime juice – 2 tbsp
  • Boiling water – 3 cups

Add ghee/oil to frying pan, add bay leaf, cloves, cardamom and cinnamon stick. Add star anise, onion, green chilli and mix well. Add ginger-garlic paste and saute till onion turns light brown in colour. Add turmeric powder, black pepper powder and garam masala powder. Saute for about 15 seconds. Add red spinach and saute for few minutes. Add enough salt for both the spinach and rice to be added later. Saute for few minutes. Add basmati rice, mint leaves and lime juice. Mix well. Bring to boil over high flame. Then cover and cook over low flame. Cook till rice is done well. Add some chopped coriander leaves. Mix gently.

Tasty and healthy Pulao is ready. You can also add chicken or other meats in this.
