Very Easy Potato curry

While preparing for breakfast or dinner, are you confused about the side dish? This potato curry will help, which can be prepared easily with minimum ingredients. This dish is a easy to prepare side dish for chapathi, appam, puri etc. 

Ingredients for Potato Mix

  • Potato (medium sized) – 3 (cut into cubes)
  • Potato (medium sized) – 3 (cut into cubes)
  • Onion (medium sized) – 2 (long sliced)
  • Tomato – 1 (sliced)
  • Green Chilli – 1 to 2
  • Garam Masala powder – ¼ tbsp
  • Turmeric powder – ¼ tbsp
  • Black Pepper powder -1/2 tsp
  • Salt – as needed
  • Curry leaves – few

Preparation

Add the ingredients mentioned above into a pressure cooker. Add 1 cup of water and mix well. Cover and cook the mix for 4 to 5 whistles over high flame. Everything is cooked well after 5mins. Mix and mash the potatoes slightly.

Ingredients for Mustard Seed Mix

  • Coconut Oil – 2 tbsp
  • Mustard Seeds – ½ tsp
  • Curry Leaves – few
  • Dried Red Chillies – few

Preparation of Mustard Seed Mix

Pour coconut oil into a pan. When the oil is hot, add the rest of the ingredients to it. Mix well and cook for a few seconds.

Now add the cooked potato and mix well. Cover and cook for 2 minutes after adding ½ cup water if needed. After 2 minutes , turn off the flame and add a pinch of garam masala powder ,few chopped coriander leaves and 1tbsp coconut oil. Mix well and Easy Potato Curry is ready to be served.
