Chicken Mappas Kerala Style

CHICKEN MAPPAS

Chicken mappas goes well with appam, rice, chapathi and even bread.

 

Step 1

Ingredients

  • Coconut oil – 2 to 3 tbsp
  • Chicken – 1kg (small cuts) marinated for 30mins
  • Pepper powder – ½ tsp
  • Turmeric powder – ½ tsp
  • Salt – ½ tsp

Pour coconut into a pan and add the chicken. Half fry the chicken till it changes it’s colour slightly. Move the half fried chicken to another bowl. The oil is required for further usage.

 

Step 2

Ingredients

  • Ginger – 1 tbsp (finely chopped)
  • Garlic – 1 tbsp (finely chopped)
  • Onion – 2 nos (thin long slices)
  • Salt – a pinch
  • Turmeric powder – ¼ tbsp
  • Coriander powder – 1 tbsp
  • Pepper powder – 1 tbsp
  • Garam masala powder – 1 tsp
  • Fennel powder – 1 tsp
  • Tomato – 1 big/ 2 small
  • Green chilli – 4 to 5 (as per taste)
  • Curry leaves – few

Add ginger, garlic and onion into the same pan. Add a pinch of salt and saute till onion turns light brown. Now add turmeric powder, coriander powder, pepper powder, garam masala powder and fennel powder. Saute for 30 seconds or till fragrant. Add tomato, green chilli and few curry leaves to it. Saute till oil separate.

 

Step 3

Ingredients

  • Thin coconut milk – 1.5 to 2 cups
  • Thick coconut milk – 1 to 2 cups
  • Ginger – 1 inch piece (julienne cuts)
  • Pepper powder – a pinch
  • Garam masala powder – a pinch
  • Tomato – 1no (sliced)
  • Curry leaves – few

Add thin coconut milk to the already prepared curry. Add a pinch of alt if required and mix well. Cover and cook well over low flame till chicken is done well. You will get a special aroma of  the masala mix and coconut milk.  Add ginger, pepper powder, garam masala powder and mix well. Add tomato slices and few curry leaves. Cover and cook for 2 minutes. Add thick coconut milk to the mixture. Mix well, turn off the flame. Cover and keep it for few minutes.

 

Step 4

Ingredients

  • Coconut oil -1 to 2 tbsp
  • Mustard seeds – ½ tsp
  • Shallots – few (chopped)
  • Curry leaves – few
  • Chilli powder – ¼ tsp (optional)

Pour coconut oil into a pan. Add mustard seeds, shallots, and curry leaves. Saute till golden. Add a pinch of chilli powder for flavour. Add this to the prepared curry. Mix well.

Tasty Chicken Mappas is ready to serve !!!
