Tomato Soup
Ingredients:
- Cooking oil – 1 tbsp
- Garlic – 1 tsp (finely chopped)
- Onion – 1 no (small size,sliced)
- Carrot – 1 no (small size)
- Tomato – 5 nos
- Water – 2 cup
- Bay leaf – 1 big
- Black pepper corns – 1 tsp
- Red chilly powder – 1 tsp
- Sugar – 2 tsp
- Tomato sauce -1 tbsp
- Sweet chilly sauce – 1 tbsp
- Corn flour – 1 tbsp
- Fresh cream – 1 tbsp
- Croutons – as needed
Preparation :
In a frying pan, add oil and when it is hot, add bay leaves, garlic and onion. Saute them for few minutes and then add carrot, tomatoes, black pepper corns, salt (as per your taste) and one cup of water. Cook well over mediuim flame. You can add celery and basil leaves for added flavor.
Once fully cooked, cool it for a while and grind it to a fine paste. After sieving, transfer it to a pan. Add additional water, as per the consistency you need, keeping in mind that it may turn thick while cooking. Add red chilly powder, sugar, tomato sauce and sweet chilly sauce. Then bring it to boil.
Mix corn flour and little water and this solution is added in steps to the above to make the soup thicker. You may have to add about 1 or 2 tsps to get the consistency. Add fresh cream and the soup is ready.
To prepare croutons, heat a pan and add butter/oil. Then fry small pieces of white or brown bread, till they are golden brown.
Pour the soup to serving bowl – croutons and cream are added as per taste.
Enjoy the soup – restaurant style, in a healthy way.
