Angamaly raw mango curry (Angamaly Pacha Manga curry)
Step 1
Ingredients
- Shallots – 3/4 cup (cut into half)
- Green chillies – 2 nos (finely chopped)
- Ginger – 1 tbsp (finely chopped)
- Curry leaves – handful
- White vinegar – 1 tbsp half tsp
- Salt – as needed
- Coconut oil – 1 tbsp
- Chilli powder – 1 tbsp
- Turmeric powder – 1/2 tsp
- Coriander powder – 1/2 tbsp
- Raw mango – 1 cup (medium pieces)
- Coconut milk – 3 cups (thin milk)
- Coconut milk – 1 cup (thick milk)
- Raw mango – 1 cup (medium pieces)
- Cinnamon powder – 1 pinch
- Fennel powder – 1 pinch
Preparation
In a pot add shallots, green chillies, ginger, curry leaves and salt. Crush and mix well all together with your hands. Now add coconut oil and vinegar into it and mix well. Then add chilly powder, turmeric powder, coriander powder and thin milk. Mix well, turn on the flame. Cover and bring it to boil over medium flame. Add the raw mango pieces and cook well. Once the mangoes are cooked well add the thick milk and salt if needed and bring it to boil. Now add cinnamon powder and fennel powder, mix well. Turn off the flame.
Step 2
Ingredients
- Coconut oil – 1 tbsp
- Mustard seeds – 1/2 tbsp
- Dried red chilli – 3 nos
- Fenugreek powder – 1 pinch
Preparation
In a heated pan add oil and once the oil is hot, add mustard seeds. Once the seeds start to pop, add dried red chilly, curry leaves and saute for a while and add fenugreek powder. Add this tempered mix to the prepared curry and mix well. Angamaly raw mango curry is ready.
