Vegetable Hakka noodles
Ingredients
- Water – 12 cups
- Oil – 3 tbsp
- Noodles – 150 gms
- Ginger – 1 1/2 tsp, cut into thin long pieces
- Garlic – 1 1/2 tsp, cut into thin long pieces
- Mixed vegetables – Onion, mushroom, capsicum, cabbage, carrot etc – cut into thin slices
- Dark soy sauce – 2 tbsp
- Red chilli sauce – 2 tbsp
- White vinegar – 1 tbsp
- Hot sauce – 1 tsp
- Black pepper powder – 1/2 tsp
- Spring onions – 1/2 cup, chopped
- Salt – as needed
Step 1 :
Boil the water along with oil (1 tbsp) and salt. Once its boiled, add noodles and boil for 3-5 minutes ( or as per instructions on the packet ). Drain immediately and wash under running water.
Step 2 :
In a heated wok, add oil (2 tbsp), ginger and garlic. Saute for few seconds. Add the mixed vegetables and salt. Saute for few minutes over high flame. Once its half done, add soy sauce, red chilli sauce, white vinegar, hot sauce and black pepper powder. Mix well. Add the boiled noodles and toss / mix well.
Garnish with spring onions and serve hot.
